This is a famous phoenix wu long and many know it by the name "Duck Shit". (No relation to the coffee of a similar name.) There are no ducks involved in the making of this tea. Rumor has it the misnomer is a comical attempt and keeping the tea underwraps when tea makers discovered how desireable the flavor profile is.
Phoenix (also called dan cong) is a subcategory of Chinese wu long tea. This type of wu long tea is typically dynamic, with light and bold flavors making an appareance throughout the brewing process. These teas are typically lightly floral with notes of desired bitterness in complimenatry play against one another.
This tea may take some practice to bring out all the complexity of the brew using a gong fu style. Once you find the sweet spot with this tea, it is sure to be a favorite!
