Tasting Notes: Nutty + Floral + Salty Toasted Grains
Huang Ya is a part of the rarest category of Chinese loose leaf teas. There are only a few farmers still producing yellow teas, traditionally or otherwise. Reason being the labor intense nature of the multistep microfermenting process. This tea is “yellowed” 3 to 7 times, which takes about 160-260 hours, then flash roasted at the end to stop the yellowing process.
This multistep process reveals a beautifully complex flavor profile similar to deliciously buttered corn roasted over the fire.
Noteworthy: This tea is made by female tea maker Xu A-yi in Jin Ji Shan and is our founder's favorite tea. She drinks it ALL the time.
