Additional Notes: This tea starts balled up in pearls and unfolds as you brew, which alters the pace of brewing in comparison to other loose leaf green teas, like Gua Pian.
If you are unsure about letting the first brew go the full two minutes, it's better to pour off the brew earlier than let it go too long. Overbrewing this tea will pull out more of the tannic, bitter notes.
In addition, remember to keep track of how long your tea is sitting in the water in between brews. Thirty seconds for your second, third, and forth brew is a guideline, not a rule.
