Red teas are often called black teas in the west, as they have a dark appearance and produce a dark liquor. However, red tea and black tea signify different categories and processes within the Chinese tea classification system.
Red teas are known to be what the industry calls "fully fermented", meaning that the leaves have exhausted their own metabolic decomposition. There are no microorganisms involved in this version of a "fermentation" process. This full metabolic decomposition is carefully controlled to give us the darken leaf and liquor color with a pleathora of rich flavors.
