Enjoy the subtle floral and savory elements of this classic Chinese white tea. Bai Hao Yin Zhen is the top or first picking grade of white tea, meaning it comprises only the new buds from the first spring growth.

 

These fresh buds are sundried. This process retains the little "silver hairs" on the tea leaves, so they end up looking like silver needles (hence the name). These "hairs" contain high levels of L-theanine and contribute significantly to the umami flavors of this tea.

    *Adjust timing and temperature based on personal preference. Although it is often heard that one should brew white teas at lower temperatures, this is not the case with high quality white teas. They can "take" the higher temperatures and still perform beautifully, such as this Bai Hao Yin Zhen.
